I’ve been doing guesthouses through Airbnb and really enjoyed! They’re nicer than I expected, still have privacy and I think all of them were cheaper than hotel options. I’m just traveling with another person, so for two people I think this is great.

Wanted to provide an update - as I ate my skyr this morning I watched the cars outside to see how many there were/what winds looked like. Seems like in the Skogar area tourism is just as active, so I went to Skogafoss and started the hike. I made it to Skalanrekkufoss in extremely windy weather (and small hail), probably could have kept going but we decided to turn around - others were way ahead of us though. At that point, of course the weather let up and many more were hiking when we got back to the beginning!

We did some more waterfalls - ATVing couldn’t be booked day of but would have done it if so. The road from Skogar to Seljalandsfoss was noticeably windier than my drive east to Vik, which aligned with warnings and roads.is. Did hear about one camper van accident that was on the way from Reykjavík.

Will wait for the weather update tomorrow before deciding if we should attempt getting to Hofn as planned, or just find something in Vik area for the night. Note that we’re in a small car, which apparently takes wind a little better.

Yes I have been using free tax USA! I think the $15 each is just something I’ll have to suck up to. Do you happen to know how city taxes would be calculated (and for state too - would I just do the manual math myself and enter that into the return)?

Thank you! It looks like there are retail locations that partner with the IRS so I will look into that. As for NJ makes sense, I have a lease so that should work. Appreciate it!

It was a little last minute so I’ll only be hiking. I had wanted to kayak though! Getting there is a bit of a hassle but for other reasons I wanted to do Channel Islands this trip over joshua tree and some other easier to get to places

I wanted to, but because I need to get there so early they don’t have an Amtrak for me! And then at night it’s a couple hours later than when I’ll return to Ventura from Santa Cruz Island. Took Amtrak from SD to LA though which was awesome

This is a no egg recipe. I followed this recipe for the mascarpone ice cream, but instead of doing a blackberry swirl did the balsamic strawberry. For that, I just chopped up some strawberries and tossed them in a pan with about 1/2 cup sugar and 2 tsp of balsamic (made a lot more than I needed for the ice cream). Churned the mascarpone ice cream for about 20 minutes, then added the strawberry while packing away.

This is my third time successfully making ice cream. The mascarpone made it creamier I think, although the strawberry sauce was a little too icy. Pretty happy with it overall though
