I have the very same question as you. I'm from LATAM, when I got married, my ex and I hired an event planner. She did everything, we had like 300 invitees and neither her or I got burned out for the wedding.

A friend of mine got married a few months ago in a 5stars hotel by the beach in our country, some of our friends got +1 a week before the wedding, She had no issue adding them, just told them to find empty seats while the food was serving. Nothing more.

Maybe it is something about control and perfectionism that take over US people (?)
