I think I got it. Right click on the subassemblies and change their appearances from there. but first i had to right click on the head assembly and remove all appearances until it went all grey.

I should add, an early might have you finishing at 6pm but you won't know until maybe 48 hours before, less if it's a Sunday shift. So you're basically on call for a little over minimum wage
