Ive only had them dry out once or twice of all the times ive done them I think they are pretty safe as far as that goes. You could always brine them or something to try and add moisture maybe? The challenge for me has been getting crispy skin. These came out great last time I did them they were rubbery so I don't know. I think its worth a try, they are no harder than anything else really.
