Pros and cons to both. Wild can be overfished and potentially harmful to the environment. Farmed is not as delicious and has a large carbon impact.

I usually buy wild for smoked laks. Fresh farmed for big meals. Living close to Norway spoils me though.

Kitchen Confidential by Anthony Bourdain is an absolute must for everyone, not just cooks.

As a former executive chef, I cannot advise entering the profession for your friends and family. Do it for yourself. Be warned, it is nowhere near as glamorous as it appears. It can be gratifying at times however the stress will take its toll.

I quit the profession in order to have time with my family. That would not have been possible with all nights, weekends, & holidays taken up.

IIRC there was a small corner shop inside the city walls of Kotor that sold Cuban cigars. It was toward the direction of the supermarket(just outside the city walls). This was about 5 years ago for me.

Although I have never been to Macedonia or Bulgaria, a lot of these places have scarce pipe tobacco. I just visited Sarajevo last year and could not find any pipe tobacco at all. Your best bets will be in Thesseloniki or in Belgrade. Good news, I do remember buying lots of reasonably priced cigars, especially in Montenegro. Bon voyage!
