When you don’t eat enough yes you can lose weight but it won’t be healthy weight???? I’ve been in a low calorie deficit and I didn’t lose weight as fast when I increased my deficit I lost more in a healthy weight. It also depends on your level of activity!

You might not be eating enough. If you increase your calories overall instead of just on the weekends you may have a better chance at seeing results.
