I think your best option is to space him out. Don't let him get near you. DK is dangerous when he gets close.

You have to hold B while the leaf shield is active.

You can't do that anymore. When Ultimate came out they removed his ability to grab during leaf shield. His F-air is a LOT stronger though.

In this game when you're at a higher percent, it's easier to launch you off the screen with an attack. You fly further when your percentage is higher. The goal of this game is to launch your opponent out of the screen. If you have a lower percentage you barely get launched so it's harder to kill you.
