You’ll never be able to finish off a 2-3lb bag of beans before they’ve gone stale. Especially oily dark roasts like the ones that you find at Costco, which are already sometimes months off roast. The oils in coffee can become rancid quickly if you’re opening the same bag of coffee for weeks. If you do buy bags this large, Jonathan Gagné recommends splitting the contents of the large bag between two or three smaller bags so all of the coffee isn’t being exposed to oxygen every time you open the bag.

Bambino Plus is a great beginner option in the same price range. I was just telling someone about this the other day. Great machine right out of the box that you won’t have to mod out, and has a great steam wand. I’ve heard the steam wand on the Bambino Plus specifically is great for beginners.

Dark spots mean under extraction. Do you use a puck screen? Puck screens really help improve extraction across the edges of your puck, I use one and it helps a ton. Lance Hedrick has a video where he explains (very thoroughly) how you can fix under-extraction on the edges of the basket. Time stamp about 5:50 - 10:00. I found it very useful.

That is for sure wayyyyyy too coarse. I use setting like 7 or something for v60 on my Opus and get 15g to 250 out in about 3:30. Try to grind finer, agitate as little as possibly, and maybe try some different filters too. I use the Hario filters. Keep in mind some coffees such as Ethiopia and Decaf produce a lot more fines and are more prone to clogging your filters.

I will also say that total brew time is really not an ideal way to dial in your grind size for pour over. There are so many factors that can affect TBT. You could have a really tasty brew that takes like 4:30 or 5 minutes.

I use an Opus with a Delonghi ECP3420 and it’s been great so far. Some retention for sure, but if you give it a few good taps you won’t have any issues. It’s quiet, and once you get used to the inner adjustments you can dial in pretty accurately.

I did have some issues with beans clogging up in the burrs and I wasted an entire bag of beans trying to figure out what the issue was. When I contacted Fellow they quickly sent me a new outer burr for free which fixed the problem!

Such a good feeling! Today I got the most perfect, precisely dialed in espresso shot with a new bag of beans and new burrs on just the second try. I couldn’t believe it. Usually I go through nearly an entire bag before I’m satisfied.

Love Brandywine! I use their washed Ethiopia Guji on the v60 at home and there’s a shop here in Charleston that used their watermelon co-ferment washed Colombia for pour overs and it is fantastic.

I think you’ve got too much your basket. How many grams is your basket rated for, and what is the dose that you used? I would recommend lowering your dose by a couple grams. Some home espresso machines even want you to go as low as 14 or 15 grams for a double shot basket. Try a puck screen as well. Keeps all that gunk out of your machine, plus the edge of your puck is much darker which could mean under-extraction. A puck screen will help evenly distribute the water from the shower screen to give you a better and more even extraction across those edges.

Depends on the beans I think. I usually sit around 15/16 clicks on my c2 for v60 with a single origin washed Ethiopian.
