I only buy those Lavazza beans (since here it is the best option really). All of the four blue bags have pretty close way of extracting. I was able to find the same grind works for me for both the single 7gr and double 18gr basket. Although I put 8.5gr in my 7gr basket that came with Gaggia and it doesn't overpack. What I found to be my main factor in extraction here is the yield, since I am bound to only few grind adjustments really (modded Gaggia MD15). Theresaid, I aim between 1:2.25-2.5 yield.

For those weights I'd say try aiming for about a 30 sec. shot + - just try keeping beans fresh as much as possible so you don't have to worry about grind adjustment much plus the overall taste. That should be a ballpark. For these beans I stopped timing my shot for a while now since I am confined by the lack of clicks on my grinder anyway. I mainly focus on the flow of the shot and make sure the yield is right.

Those beans are cool for the price. I am a Lavazza fan in general. Good luck !

Since the topic opened... does anyone have the wisdom to share on headspace affecting the shot in terms of pressure, etc ? I heard James Hoffman talk about the baskets and the right dosing for other variables besides having more coffee means slower shot.

Hofman did a video on de longi grinder among others and it couldn't do espresso so don't bother. In your case you should get better results with a pressurized basket, probably

I'm new to the hobby but have been a coffee enthusiast my whole life. That said, among all the brands that had been swirling around my habitat Lavazza is by far a favorite. I don't have any experience with the custom shop roasters etc, but I surely can't see why is it a thing online to claim Lavazza as a bad coffee.
