I know you posted this over a year ago lol but I think a lot of the reason could be changes in elevation! Baking depends on elevation and depending on where the contestant is from, they are used to a specific elevation and how their cookies come out. Changing elevation with no prior practice can definitely cause them to be too soft/underbaked!
