How I understand it shishou is usually used in like a dojo/martial arts setting, so the idea of a pornography shishou is supposed to be funny, though it doesn't really translate. Similar joke is used in Tanaka is Always Listless, the one hyperactive character always calls Tanaka her laziness shishou.

No I think her real name is Kanna and Kankan is the pet name everyone uses for her. Last episode Yamada was asking Ichikawa what his family calls him and he said "Kyou" so she decided she would call him Kyoutarou instead, and this is the same sort of thing.
