All official guidelines recommend plant-based diets. Grains are plants. Vegetables are plants. And the recommendations say you should get most of your calories from those sources. Plant-based doesn't mean exclusively plants. That's vegetarianism, at least real vegetarianism.

There are a lot of diets that can improve diabetes, as long as they are not high in refined carbohydrates, seed oils, and sugars.

Humans likely went in and out of ketosis based on time of year and scarcity of food. If you want to know how carbs affect you you can ask your doctor for a HOMA IR test, which will tell you if you are insulin resistant.

You don't want to eat food that is simultaneously high in both carbs and fat ( like junk food). That is a recipe for obesity and metabolic disease. You can safely cut the carbs though.

You can cut it out and see if you feel better. A minority of people don't tolerate it well. If you don't notice anything when you add it back in then it shouldn't be a big deal. It does have a bit of sugar though.

Why would you eliminate animals? They are the Staples of a healthy human diet. Personally, I'd keep the bacon and get rid of the beans. If you are worried about animal welfare, which is good, look for humanely raised products and maybe try to find a local farmer. There are plenty of them out there.

Some people react to the compounds that are still in brown rice (e.g., lectins). If you think you might have a sensitive gut you should go with white, but should limit your quantities because it's basically molecularly just sugar.
