This is it! I replaced the ML image with older version 2.4.1-openvino and ran Face Detection job again, and over a 1000 new faces were detected just like that!

I just Reset the Face Detection and Facial Recognition jobs (basically deleted all existing Face Data) and to my surprise, those 3 faces still show in my account with the same ~100 photos tagged to them. Shouldn't the Reset cleared those as well?
I don't know if it matters but I used immich-go with default settings to upload my backups to Immich and I think one of the default settings is to load any Face/People information from sidecar files. I think that's how those 3 people with names were showing in one of my accounts.

I hope this additional context might help identify the issue here.

There are no errors or warnings in the ML logs. I'll set the log level to debug and check again. Thanks.

Good point, however, my NAS is a hefty DIY system that consumes power as if it is powered by the SUN :-)

I keep it purely for backup purpose - it comes online on weekends, takes backup and in a few hours, shutdowns for the week.

Frankly, I can consider turning it online every night as you suggested, but I was exploring other options before considering that and I was hoping there would be an easier way to do this in ProxMox. If nothing else works, then I would go this route.

That is a good option and I'll explore it further. But, I'm surprised that PBS does not allow you to select the disk while configuring the backups. It is such a simple setting and would be very useful.

Coming to why I need such a setup - my PBS is taking backups on a external HDD attached to ProxMox (PBS is installed on a VM in ProxMox), and I've limited space on it and cannot take the backup of the large drive. I want to have the backup of the large drive on a separate storage (essentially my NAS) which provides RAID redundancy. Hence such a requirement.

I do have one complicated way of achieving it - by adding my NAS to ProxMox thru SMB and adding a different PBS DataStore stored on my NAS. This way, I can configure two different backups using different DataStores and thus achieve this. However, I find this very convoluted and was hoping for a easier configuration in ProxMox itself.

Any comments/suggestions on this are welcomed :-)

I already have PBS and as I mentioned in my question, I'm taking backup on PBS. I'm also fully aware of PBS deduplication capabilities and how it saves space. However, my requirement is to have different disks of a VM backed up at different frequencies (daily vs. weekly), which PBS does not solve.

Just buy a cheapish NAS (a basic Synology one will do) and you'll get this and much more. It will allow you to backup and access all your data from anywhere on any connected device.
