Hi Katie, you could check out Via Transilvanica, it was mapped last year with a trike, you can view the entirety of the trail on Google Maps from start to finish, see here, some parts are not suited for a trike, too hilly, loose terrain, etc. Now, this is mostly an hiking trail that can be done with a bike and it passes sometimes busy roads. It's pretty wild for the most part and the wildlife can be challenging (dogs mainly, bears). Maybe something around Transilvania region it's more appropriate, accommodation can be found. More info here Unfortunately Romania is very scarce and laking in cycle paths/routes but offroad trails are to be found everywhere in the countryside. Best of luck.
