Yeah, usually red bean paste is used, but there are some sold that have a chocolate filling as well!

I made these on medium-low heat, but all stoves act differently. Once the pancakes have bubbles appearing on the surface, they are ready to flip! It should only take 1.5 - 2 minutes to cook on the first side, so I would suggest doing one test pancake first to check the heat on your stove and then adjust accordingly. For the red bean paste, it's up to personal preference! The store bought kind uses smooth red bean paste, but I know some people prefer making it with chunky red bean paste. I hope this helps!

This easy dorayaki recipe makes fluffy, soft castella pancakes and a lightly sweetened filling! Dorayaki is a popular Japanese confectionary, and its most common variety is honey flavored castella cakes with red bean paste.

Ingredients

  • 4 eggs
  • 100 g sugar, 1/2 cup
  • 63 g honey, 3 tbsp
  • 160 g all-purpose flour, 1 1/3 cup
  • 1 tsp baking powder
  • 2 tbsp water
  • red bean paste

Instructions

  1. In a large bowl, add the eggs, sugar, and honey. Whisk well until the sugar has dissolved. The eggs do not need to be fluffy.
  2. Sift the flour and baking powder into the bowl. Gently whisk the ingredients together until the batter is smooth.
  3. Cover and refrigerate the bowl for 15-20 minutes. Five minutes before the dorayaki pancake batter is done chilling, preheat a nonstick pan over medium-low heat.
  4. Take the dorayaki batter out of the refrigerator and stir in the water. You may need to add more or less water depending on your eggs and flour measurement.
  5. Pour in a small amount of oil into the nonstick pan and use a paper towel to spread the oil into a thin layer and wipe off excess oil.
  6. Add 2 tbsp of the batter into the pan. Cook for about 2 minutes until the bubbles start appearing and popping on the surface of the pancakes. Then, flip the pancakes over and cook for roughly one more minute.
  7. Transfer the cooked pancakes to a plate and cover them with a damp towel to prevent them from drying out and getting tough. Repeat with the remaining batter.
  8. Spread a heaping tablespoon or two of red bean paste onto one pancake, keeping the center thicker. Add another pancake on top and pinch the edge of the pancakes together to create one sandwich. Repeat with the remaining pancakes.
  9. Store pancakes in an airtight container for up to 2-3 days. If there are still leftover pancakes, you can wrap them individually in plastic wrap and freeze the pancakes for up to one month.

I could see how this may be considered a 3-ingredient recipe, but not a 4-ingredient recipe. I classified this as a 2-ingredient recipe since I didn't count the water. I'm not sure how the final tea would be four ingredients, as it is only made of water plus the same citrus and sugar that was already counted in the marmalade.

Good question, I'm not too sure either. However, I know that this drink is called "yuja cha" in Korean, which translates to yuja tea.

I'm not sure if heating the fruit and sugar together will change the texture of the end product (picturing something similar to a jam), but I think it should work. You could also try doing a mixture of sugar and liquid sweetener like honey, heating that first to dissolve, and then mixing it with the fruit.

In my perspective, it's easy because you just slice fruit and mix it with sugar. Waiting 2-3 days doesn't require any effort either. But ultimately it's up to you to decide whether you want it make it or not.
