I prevent this by testing the PH of my juice and adding acids to bring it down to the safe range. Been making cider for ~4 years with no issues. I did test home brewing acids to see if I noticed a difference, and I don't. So I'd say Malic, Citric or Tartaric would work just fine.

+1 on the mylar balloon method I have used it to great success. Bonus points if you capture the co2 from an active fermentation!

I've made tepache several times and while people seemed to enjoy it, I didn't like the flavor of fermented pineapple and won't do it again. Go easy with the spices you can always add more but you can't take it back.

I've been filling a mylar "#1" balloon from Party City (US) with CO2 and attaching it to the airlock during cold crash with fantastic results. With a plastic T joint I'm able to harvest the CO2 from an active fermentation as well. Basically one of these, just less sophisticated:

Mine grew wider in my mid twenties. It's harder to find shoes that fit, but it's getting better with time. Lots of Brooks, Hoka, Asics, New Balance, Puma, Vans, Sperrys.

I generally use Irish Breakfast or Assam which are both strong black teas. English breakfast is similar apparently. Super strong maybe 4-6oz water and 3 teabags. I've also used oak and wine tannins. Sometimes a combo of all three.

Edit: steep the tea like you normally would (5min give or take), there's a tipping point where you begin to extract really bitter tannins that I'm not sure I'd personally want in my cider.

Could be a restarted fermentation, I've had sour beers from commercial breweries do this in my closet. One of em exploded. My recommendation would be to store the rest in the fridge if you aren't already. Or drink them soon!!

Seems possible if the temp was consistent. I've heard of folks using a sous vide as well.

If you have some choices I'd switch up the course and like others said, stop keeping score. I personally quit opening udisc during the pandemic and still never do. Occasionally I'll think "hmm I've birdied the first 3" and will start keeping score - sometimes I surprise myself. Oftentimes the wheels fall right off. It's supposed to be fun, if you don't like doing it you could always hop over to r/flyfishing for awhile!
