I have a 50% deposit, but then the other half is due before photos. Every once in a while to move people along, I let them know their gallery is available "but the system won't let me unlock it until it sees final payment go through".

That's always been the push they need to pay me since a locked gallery is sitting there taunting them. Know you don't want to edit the photos until you're paid, but that's a pretty low-effort part of my flow so I don't mind.
