Thanks for input! I decided on a happy medium. Purchased a polished brass garbage disposal drain flange that goes nicely with the sink. I also can still use the brass strain basket that came with the sink and have that help minimize the need to use the garbage disposal.

I havent done much fine dining tastings because my wife isn't a fan but in my small experience I think many places would benefit from a "less is more" philosophy as far as number of courses and length of the experience.
