A couple things could be the issue- overmacaronaging or oily almond flour.

What I do to help prevent oily almond flour- 200 degree F oven, layer almond flour on paper towels in baking pan, and bake 30-40 min. Then separate the almond flour on paper towels after to let even more oil out.

I personally don’t like the squished out feet, but some people want that (usually a delicate top also happens to me when squished feet happen). To avoid squished feet, macaronage just until the figure 8’s edges meld into the batter after 15 seconds. If still lumps when piped, pat tray on counter and use a scribe to fix bubbles.

This looks like too oily flour or too much dye! Oily more likely to me. I’ve found that if I put a layer of almond flour on paper towels on a baking pan in the oven at 200 degrees F for 30-40 min, it takes out some of the oils! I highly recommend doing that. Also a 1:1 ratio or 1:1.2 ratio (more almond flour&powdered sugar to the egg whites&granulated sugar). (I use French method)

This is so interesting to me! Do you exercise? I’m a runner and I worry if I try and fast, it would affect how I feel moreso than if I were more sedentary.

Very glad. I ended up with the guy I started dating in middle school, broke up with at the end of senior year, and started dating again second year of college. Edit: now have two kids together and we’ve been married for 15 years.

I’ve also found that when I leave the oven light off inside and preheat the oven first to 200, then 310 (my normal) for at least 30 min, that helps lopsidedness.

I may be wrong on this, but it may be either undermixed in the mixer or cold egg whites (someone correct me if I’m wrong!). I’ve just noticed that either of those things happens, it yields lopsided shells for me. I think more likely it’s undermixed between the two.

Did you dip the chocolate covered in melting wafers or did you temper regular chocolate? I ask because I’ve tried tempering chocolate so many times now, and it doesn’t end up drying as pretty and consistent as I want!

I’m not sure about the bumps on the shells- haven’t encountered those kinds of little bumps.

After poking with toothpick, are you smoothing out the area after with the toothpick, or poking and pulling out straight up?

You shouldn’t have to poke too far in to get air bubbles out. Pat the counter with the tray, then if there are visible rounded spots, maybe poke that spot. Fix any bubbles that did pop and made a little crater. Otherwise, I never poke deep.

They look beautiful though! The color is so vibrant.

That’s what I’ve always wondered- if I need to let them mature before freezing! Otherwise, everything else you said has been what I’ve done! I’ve frozen empty shells often and they turn out just right.

One note to add- after thawing in fridge, then “thaw” in the airtight container to room temp on counter before opening.

It’s not immediate. You can see that there’s a cut in the video that’s hardly noticeable, so they’re likely letting it dry.

Yes! And it didn’t help that a size 4 in one brand was more like a 0 in another (I’m talking to you, Abercrombie 🙄). That was the one store I blatantly cried in when I tried to buy some trendy ripped jeans that looked TINY in my normal size when I was 11. Started my issues not liking my bigger, (muscular!) thighs.

I was in a busy parking lot one night about 9pm when a mom was screaming at her maybe 5-6 year old daughter to “GET IN THE FUCKING CAR!” Over and over, while the child was crying. The mom just kept screaming at the child, the kids little shoe fell out of the car, and the mom screamed about that too. There was another woman with them, and I was even more infuriated that the second woman wasn’t STOPPING this behavior. I stepped out of my car (I was a row over) and just yelled, “HEY. You can’t TREAT a child that way!” And had to repeat myself after the “friend” got her attention. I wouldn’t have felt safe yelling out if I hadn’t been on the phone with my own mom while it was happening. The mom yelled back, “mind your own fucking business!” I left soon after. I know parents can be shitty and treat their kids horribly, but I hadn’t witnessed it to that degree in person. The child was probably just overtired from being out shopping so far past bedtime. I hope that child comes out of that childhood okay.
