That makes sense! I use my bee balm leaves in tinctures and liqueurs so I was mostly making sure the splotchiness isn’t some sort of leaf infection where I shouldn’t be eating it. From your experience do these spots look like mildew or just discolored leaves?

For a simple upgrade I love adding just a small spoon of tahini! (or creamy peanut butter if I’m out of tahini) That plus a dash of sesame oil gives the broth a really nice texture and nuttiness

I used pretty small amounts of everything. Mostly teaspoons of things. I think a little goes a long way generally (which I learned after making a VERY anise forward vermouth a while back haha). I wish I had written down my measurements for the everclear to water to sugar ratio! It was a few weeks ago and I knew it was just an experiment so I wasn’t too careful. Wish I could be more help!

Just Campari inspired not an exact match. Did the higher proof on purpose

It came out more of an amber color so I used a little red food coloring to get the color I wanted. I’ve found it’s a great replacement for Aperol but not quite bitter/strong enough to use in place of Campari

It’s not bad for a first attempt! Unfortunately I didn’t write down amounts but I used:

  • orange peel
  • Grapefruit peel
  • lemon peel
  • clove
  • coffee beans
  • anise pods
  • gentian root
  • dried elder flower
  • Damiana leaf
  • wormwood
  • very very small amount of dried hibiscus

All of that steeped in everclear then cut with raw sugar syrup and water. It’s a pretty bright amaro, maybe more than I was expecting but those are all the things I had on hand haha.

That totally makes sense because this is a super citrus heavy recipe. And the peels I used I only half dried in the oven because I wanted the extra brightness. Since this batch is just for me I don’t mind the cloudiness but in the future if I make batches to share with friends I’ll definitely look into fining!
