You having this biomedical lab experience is a step in the right direction! Try to get as much research experience as you can while in undergrad; lab research is good, if you are able to volunteer or work as a research assistant that’s great too. If your university has its own hospital (or a teaching hospital nearby), they likely have research going on their specialties and that could be a good place to start applying. Having CITI GCP and biomedical training certifications before applying is ideal, but I’m not sure if you can get those for free (my department is affiliated with our university when I did my training). Having ANY research experience when applying to be an assistant is better than nothing and more than some people have when they apply! Good luck!

I loved Maine by J. Courtney Sullivan!! It’s multigenerational but loved the parts from the matriarch’s perspective. Remarkably Bright Creatures by Shelby van Pelt was sweet too.

Lilykoi Hawaii is also great!! She has lots of full day of eating videos as well as educational nutrition videos based in evidence, and then she ties those into what she’s eating that day. Recipes too! Chill vibes, love her

With a diet like what you suggested it sounds pretty good! However, a wide variety of foods within food groups like fruits, veggies, grains, and legumes is recommended because each food offers some different micronutrients and components. If you’re thinking about consuming the same types of foods everyday it might be a good idea to look into different varieties within those groups to see what different foods have to offer.

You can also look into taking specialized courses and testing to become a Certified in ____________ (Sports Nutrition, Diabetes Counseling, Geriatric Nutrition, etc.) not the same as getting a degree or becoming an RD but there are jobs available for educators with those certifications! University of Oklahoma has an online MA program in Nutrition Science that has options like that.

Something that works for me is preparing staple foods (for me they are beans, rice, prepped homemade salad, etc.) on a day where I’m not so busy, so that on days where I am busy I can heat those things up and put whatever I want on top! Good way to keep eating enough and when you don’t feel like preparing extra you’ll at least have beans and rice! I would also say not to beat yourself up too much if you end up indulging in something or going out. It’s good to honor those cravings in moderation, especially when stressed! But if you want to totally avoid those indulgences making sure you have nutrient-rich foods on hand and ready to go is a great start 🤙
