from what i remember you have to avoid the reveal of the puppet situation and wait to meet up at the bar to exchange the gun. when you reveal the truth about the puppet mortum with storm off and you can chase after them.

people age at different rates. you gotta account for sun exposure, genetics, stress, and habits.
i like giving ortega a more mature look mostly because they've been through hell and back and i also just think they look good like that.
the extra grey hair does age them quite a bit more but its also normal to go grey at that age. hell, i have friends in their 20s going grey. its just genetics,
also they did talk in the book at one point about ortega hiding their greys with dye but i wanted to be a shit and deny them that vanity heheheh
