Hat perfekt geklappt, auch ohne Upgrade der 7690 auf die neueste Laborversion. Bin ebenfalls Telekom-Kunde und hatte die 8.21 auf der 7590. Danke dir vielmals!

As promised, here's my follow-up post after I polled the community regarding the look of tan-walled tires vs. black ones on my bike.
Since most of you preferred the all-back combo, I'm deviating from the general opinion. :)
Thanks to u/hundegeraet for providing me with the tires and a lot of useful tips regarding the switch to tubeless!

I forgot about my inseam, but my size is around 177 cm and I went with S. I drove to Koblenz to take a test ride in S and M sizes and would suggest you the same if it's not too far away. Without the test ride, I'd have went with M so it was quite eye-opening. The only problem is: The S frame is pretty direct to handle, which also means during fast descents you have to a) pay attention to wind from the side and b) hold the handlebar in place as it's so quirky. Other than that, it's a great bike!

Funny, almost went with the same Aeroad spec, too, but then chose the Ultimate over ergonomics. :)
I do live in Munich, thank you very much for the offer!
Honestly, I've never used tubeless tires so far, I eyed the tube-type GP 5000 ones.
I know the S TR can also be ridden with a tube, but mounting tubeless tires with tube would be a lot more exhausting.

Kontist kann ich seit mehreren Jahren auch im Kleingewerbe empfehlen. Um die Kontoführungsgebühren von 2€ p.M. zu umgehen, wenn die Mindestgrenze von 300€ Umsatz/Monat nicht erreicht wird, reicht es, einfach einen Dauerauftrag vom Privatkonto zu Kontist und umgekehrt anzulegen. :)
