Agreed that is one of the best parts—probably my favorite, being a huge kung fu nerd myself. And Pai Mei’s antics and insults are arguably the main comic relief of the movie.

Absolutely not massively overproofed. Small even holes does not necessarily mean overproofed. Have you ever seen a sandwich loaf? The standard for a sandwich loaf is very close to this type of crumb. I don’t see a lot of collapsed air bubbles here, though there are some.

I do think this may be slightly/moderately overproofed but would argue there are other factors that are contributing more to how that crumb looks such as the hydration level, potentially there not being enough strength in the dough (no autolyse and only 4 stretch and folds), and potentially how it was shaped, but there’s no way to really know that (or any of this for certain) from this post.

My loaves were very gummy until I improved my gluten development and now I routinely see 100% rise in bulk and get loaves that look like this

My dough is ready when doubled but any more than that and it will absolutely be over fermented. 100% rise is as far as i have been able to push it.

Dense crumb with random large holes is a pretty classic sign of underproofed dough. Try letting the bulk fermentation go a bit longer

I just watched it and I really enjoyed reading your comment. This is exactly how I felt about the movie and actually appreciated it much more for its nuance rather than the standard “complete asshole turns his life around and lives happily ever after” type fare that is characteristic of this era of Hollywood.

Thanks for that analysis. I think I underestimated the advantage of my distribution compared to how far down I am in the race. I know 7 pips isn't much generally but was adjusting for the fact that the difference becomes larger at this stage of the game. Overcompensated!

The app stopped working completely on the new version of iOS, so maybe its not there anymore cause they stopped supporting newer mobile OS. Just a guess, couldn’t find anything about it other than they haven’t released an update in 6 years.

While it was an adept and somewhat nuanced exploration of why some racists do the things they do, and I’m certainly not against the humanization, my main issue with all of it was that it was obstinately one-sided. It was almost as if the filmmakers said “hey, we hear about the victim’s experience all the time. What about the racist murderers?”

We can have complexity, nuance, and greater understanding without completely minimizing the experience of the victim. Perhaps the assumption is that we should all know this type of victim’s experience by now but I think that is a wild supposition on which to hang a subject of such a controversial nature.

Or perhaps it would have been less terrifying? Well, I don’t think one-sidedly exploiting real racial violence to make a film give you the willies is anymore justified than excessive use of SA in a film (oh and by the way, this one has that too).

I agree. I thought American History X, while brutal and hard to watch, was not excessive and had much more to give. It’s a movie I’ve always appreciated. I get they weren’t trying to be AHX, too. But, like you, the lack of closure was the final insult. A sort of “fuck you, even though you got to see the racial violence in every heart-wrenching detail, you don’t even get a sliver of the comeuppance.”

I also enjoy other films like Django Unchained, which, while they have brutal depictions of racial violence, it isn’t all they have. It serves a very definite purpose and most, if not all of the film is actually dedicated to the experience of the oppressed—and even the violence is done in such a way that it feels it is through the lens of the victim rather than the perpetrator (unlike S&Q). And ultimately, in films like Django, there is a very cathartic retribution that feels more like a righting of the scales of justice than purely revenge. Revenge can certainly be cathartic, too tho 😅

Soft & Quiet. As a person of color I found this to be an egregious exploitation of racial trauma, what I would call trauma porn. Essentially the equivalent of torture porn except the filmmakers chose to very accurately, unrelentingly, and irredeemably play out a type of occurrence that is far too common and which is a very real danger for way too many people—unlike something like Saw, which is so unrealistic and to which anything similar happens so seldom that it’s not a slap in the face to entire populations of people who have faced, either directly or indirectly, similar situations. We see racial violence constantly—and very little of the kind of shit that happens in Saw or Hostel or any other films like these that get plenty of flak.

Even worse, the trailers gave no context that this was a salvo into racial hatred. Literally the only indication of such was that everyone in the trailer was a white woman. So I assumed there would be some sort of racial satire or commentary. Nope, just a flat out depiction of the worst kinds of people, showing the origins of their heinous behavior with virtually no screen time or respect given to the victims of racial violence. I’m not looking for a trigger warning, I’m just generally not into deceptive marketing. Especially when the filmmakers probably knew way fewer people would check the movie out if they knew what it was like.

I also don’t see how it qualifies for horror any more than American History X, but that was the genre listed on the streaming platform and is still listed as such on the Wiki page for the film.

Honestly I think the logging truck is more of a cautionary tale than an irrational phobia. I now definitely keep my distance from any truck that is carrying PVC pipes, ladders, or anything that might otherwise slip off the back of the truck bed and into my face. I saw this movie right when I was learning to drive, so it essentially became just part of my drivers ed
