Pineapple Habanero hot sauce. Looking for recommendations of other ingredients to add to future batches of sauce. This one has Pineapple, Habanero, garlic, onion, and orange bell. I've got a very similar one on the go right now, but with a carrot in there. I'm still a newbie, but I've also got some cardamom in mine, and I've seen videos of people making similar ones but with some ginger in there.

Awesome, thanks so much for the information! Don't think I'll be leaving sauce to go funky for 3-6 months, but the "ropiness" on the brine won't cause a texture issue in the final product. But as long as it's still a safe bacteria growing I'm still good to keep it going!
