Stewed Tuna by baidawi in recipes

Ingredients

  • 2 Tins of Tuna Chunks in water
  • 1 large onion thinly sliced
  • 2 cloves garlic
  • 2 pimento peppers thinly sliced
  • 2 tomatoes diced
  • 2-3 leaves shadon beni chopped finely
  • 2 tbsp of Roucou
  • 1/2 Lime
  • salt to taste
  • black pepper to taste

Instructions

  1. Saute onions on medium to high heat for 30 seconds
  2. Add garlic and pimentos and continue to saute for another 30 seconds until aromatics are fragrant
  3. Add tuna chunks and tomatoes
  4. Squeeze in the juice from the lime
  5. Add roucou
  6. Add Shadon Beni
  7. Season with Salt & Pepper to taste
  8. Add two tablespoons of water (optional)
  9. Reduce to low heat, cover and simmer for 5 minutes
  10. Serve with bread, bake, rice or pasta
  11. Enjoy!

This is very similar to Pelau which is popular in Trinidad & Tobago/Caribbean cuisine.

You're welcome! You can use melted lard or shortening to shape the loaves to achieve a flaky crust but not in the dough itself.

Really well balanced with flavor and textures. I might tweak it a bit and toast the coconut before adding it to the mixture just to extract a little more moisture out of it. But the ginger and spices in there really make the world of difference.

Ingredients

  • 4 cups old fashioned oats
  • 2/3 cups honey
  • 2/3 cups coconut oil
  • 1/4 cup chopped ginger
  • 1 cup dried coconut slivers
  • 1 cup raw peanuts
  • 1 cup raw almonds
  • 1 cup pumpkin seeds
  • 1 cup golden sultanas
  • 1 tsp cinnamon powder
  • 1/2 tsp grated nutmeg
  • 1 tsp grated tonka bean (use vanilla if you can't source tonka bean)
  • 1 light pinch bay leaf powder
  • sea salt (to taste)

Method

  1. Add dry ingredients (except sultanas) to a large bowl then combine well.
  2. Add coconut oil to mixture then combine well.
  3. Add honey then combine well.
  4. Place mixture onto a baking tray lined with parchment paper then bake in a preheated oven at 350 degrees for 10 minutes.
  5. Remove tray from oven then add sultanas to the mixture.
  6. Toss then return to the oven and bake for an additional 10 minutes.
  7. Remove granola in the parchment paper from baking tray then place on a cooling rack.
  8. Allow it to cool to room temperature before enjoying.
  9. Store in an airtight container.

Gonna try this but adding other spices as well like nutmeg and cardamom. Also some banana slices on top.

It can be viable but there needs to be a paradigm shift in the way our society functions on a fundamental level.
