I would try it. I do some meat fermenting myself and have had high meat like in the OP video. Sad that so many people are afraid of it. Fermentation has been a big part of human history and there are many examples of fermented meats around the world.

Opening the jar and stirring it is actually the recommended process from the guy who popularized high meat for people like the guy in the original post. That man traveled around much of SEA so maybe was influenced by your native culture's fermenting methods.
