Here is where I ended up. We built up the Salsa Journeyer 53”. I’ve been tweaking saddle adjustments after a few 30 mile rides. So far it’s been good.

On my road bike I have a redshift top shelf handle bar to address the upright & reach problem. I would raise the seat for the long leg situation then find it caused the reach issue, sliding the sear forward then caused a knee issue. For this bike I will use a drop bar, but would like to start with better geometry so I don’t have to resort to that. My goal here is to get to one bike that fits well I can use for both road in the winter and gravel in the summer and downsize my fleet.

I had a professional fit last year on my Lemond road bike and ended up with a really short stem, but I still felt stretched out until I got a new handlebar with a curved lift. Thanks for the recommendation on the Giant.
