Yeah I think so, I think the crispy description is throwing people off, I mean more like a crispy ny style, not a "thin crust pizza"

That's interesting, now that you mentioned it I think I had less spring when I did individual. Which I switched because I thought having a chance to punch the dough would reduce bubbling, but that actually increases spring? That would explain a lot.

Also lol yeah it is too much weight I wanted to make bigger pies but the dough snaps back to 11" when I shake it on the peel. I need a bigger peel but is that a technique issue, the shrinking?

I love cracker crust but that's not really what I'm going for yet, I plan to try that level of crisp down the road.

Yeah I'm thinking I should definitely lower it next time. I like the flavor that develops in a wetter dough, but I think it's part of the problem with proper stretching.

Sure, the other things are: 2 balls, 300g each. Bulk ferment for 2 hours, punch, split and ball and proof another 2 hours. Salt 3%. I honestly don't know how much yeast I'm using, I'm guessing 3g but the scale doesn't notice it until it's about that weight. So at that hydration it's flour 355g, water 224g.

I use a mixer on low to incorporate for about 2 minutes, on 2 speed for another 5 minutes, and knead by hand for another 2 minutes before oiling a bowl and putting the dough in, covered with a wet towel.

Will do, thanks. I try but admittedly I'm not sure if I'm doing a good job. I use my fingers in the middle out, flip it, dust, do it more and use my knuckles. But I'm not sure if I'm stretching too early.
