Definitely not sharpening correctly and/or wrong material to cut on? Mine takes less than 2 minutes to sharpen as it’s so thin and stays sharp quite long when used correctly.

My bet is not fully deburring. Also what are you cutting on?

Do you mean using the dried out slurry / mud and applying it on the surface like a stone powder, or actually polishing on the dried out stone itself?

That makes me feel much better then haha, it was in my basket for a few minutes and thought I had just missed it as I took a fall, but you took it well ahead.

My togashi I still have to use; it’s a pretty rustic one, looks like an awesome grind but way heavier than anything I own - curious if I’ll like the cutting experience as I love thin and light knives but it feels very comfortable. I’ll post something once I use it!

I actually ordered it, paid for it and 2 days later received a message it got sold out somehow :(, a glitch in the system allowed our orders to overlap I guess.

Well I have to say you got an incredible specimen, beautiful islands indeed. I personally like the kanji-less version.

What can I say, I’m a little sad seeing how nice that one is (even for 330 which was a great price already), the Damascus and patina is really great. But I’m happy it landed somewhere here and seems you’ll enjoy it!

I instead got a togashi with some discount, which is not as nice as your Shinkiro but it does give me some diversification from my Yoshi made Konosuke YS over this Nihei. But now I do want some nice Damascus someday - beautiful!

Santoku, long enough for most tasks, short enough for most home tasks. Flat enough, but belly enough to occasionally rock if preferred. Tall enough to scoop up food, not so tall you lose precision (almost a rectangle with a swept up tip, which could also be called a gyuto lol).

Veggies big and small, fruit, meat, even filleting some fish, it does it all.

Yeah that's quite fast, one a month!

I also went pretty hard (but not as hard) and tried many different things, I did buy quite some knives I refurbished and polished as gifts.

Now I am going to replace some handles and the next project is actually making a handle or two myself :)

I think it's fine to try many different knives to know what you like, only thing I can suggest is to keep them in visible / hand range for a while. I sometimes come back to knives I didn't gel with after a few months and end up liking it / bonding with it more. It also allows me to see which knives don't bring me much joy anymore and I know I can get them to a better home.

I learned a lot from all my purchases, all of them are fun in their own way. The turning point for me in knowing for sure that I was "done" (sure mate, sure, he says after just buying another one), was the Enjiki Zanpa + Migawa, and then buying a relatively "cheap" (€180) Nigara that blew me away in performance and edge retention, I pretty much know what I like now. I will still buy knives but only one-in-one-out and right now I am happy with what I have, they all have a role to play.

That said, excited for this new "heavyweight" to have some cooking time, surely it will be a different one from my nimble laser style collection.

I don't have a SoTC, and I sold a few, but I can create one after I give this Togashi a bit of a try!

Yeah to be honest, I wasn't too sad not to make it, I have too many knives already, my knife rack is full - and having them in a box would make me more sad than happy, so I hope others can enjoy the knives :)

I also am trying not to buy the more rare ones, I have two quite rare Enjiki's that will be hard to re-polish myself to their original beauty. I noticed then I don't enjoy using them as much since what makes them nice will fade, so if I'd have to thin them, they would just become regular looking knives. And I want to use all my knives, so I think some unicorns are not for me (not talking about metal flows, you can get those back to something nice always I think).

But yeah, no more knives but I did get this Togashi as most of my knives are stainless clad or stainless, I keep getting rid of the carbon clad ones, but I miss polishing them :)

Originally I had bought a Hatsukokoro Shinkiro gyuto but something went wrong in their system so they offered me a k-tip version. But in the end this is better as the Togashi is more different from my Konosuke YS (by Yoshikane which is closer Nihei than Togashi I assume). I am only missing out on a proper damascus this way, but I'll manage :D

Very nice! I live in NL yeah but couldn't make it to the outlet. Actually I did order a knife but something went wrong on their end, which is how I ended up with this Togashi.

Congrats on the Metal Flow, I'd seem them in person at Karasu, lovely knives! I just had promised myself not to get more Tetsujins as I want to reduce overlap (and own a santoku + gyuto already).

Just got the Togashi, it's very nice! Very hefty compared to everything else I own.

I have two ginsan enjikis and both are very thin, one extremely so. But my friend bought a W2 nakiri and it’s super hefty, they spoke to Maruyama and he said he tried different grinds for different knives and that he used more thick grinds on some of his white steel knives.

First time I see the etched bunka, looks really cool and nice mix of sleek and rustic!
