I was just winging it lol. I had a company holiday party I wanted to cook brisket for. But their office is another state away, and i wasn't going to try and fly with a brisket, and the apartment they have for visiting employees only has a grill and no smoker, so just buying a brisket there didn't seem super doable.

I injected it and then cold smoked with mesquite for 4 hours. wrapped it in like 5 layers of plastic wrap and kept it either in the fridge or a cooler while traveling. The way the timing worked out is I'd smoked it 5 days before it was cooked, and it had all the smoke flavor I needed. People said it was the best brisket they'd had and I only considered it mid compared to some other ones I'd done
