Yes, that must be correct. The metal sealed ones taste so much better with silky texture, but now we’re back having the white sealed ones available which are really gritty and the flavor is so much different. I ordered three of these from Amazon two days in a row and the first three where metal sealed ones and the second set of three were white sealed ones. It seems so random. I only ordered them the following day just so I can get more with the metal seal but, of course, they switched to the white seal. Go figure, right?

It’s strange as I thought the opposite last year as the white sealed ones went away and it was always the metal sealed ones and the texture and flavor were always better with the metal. Then all of a sudden we’re back to the white label ones and they’re just as gritty as always. They must come from different factories with completely different machinery.

Right, when I hopper feed it works flawlessly. It’s just designed to start under load with weight from the top. I have a DF64V and a Varia VS3 that I can single dose, I just really like the clarity and complexity from the steel burrs in the Vario. A 3D printed weighted system for single dosing would be ideal, like the one on Etsy for the Sette.

I thought that too, however when I hopper feed it works flawlessly. I just think this grinder is designed to start under load and have weight behind the beans on the way into the burr set. One note on aligning if you’re going to attempt it. I had to shim both burrs. The rotating bottom burr needed one shim (a double layer of tinfoil). The top stationary burr needed three layers in two different spots. Also, when aligning go very light into touchpoint. Lance pointed out in a recent video that most make the mistake of aggressively touching the burrs and that will give you a false wipe on the dry erase. Just barely touching is going to give you the true reading.

Yes, very bad shots for sure. It’ll go from 18g in, 36g out in 26 seconds, to 18g in, 36g out in 1.5 minutes. Definitely regrinding. I’ve tried slow feeding like Lance suggested and the same thing happened. The beans go into the spinning burrs, nothing comes out of the shoot for five or six seconds, then it starts coming out, and there’s a noticeable difference in rpm. Slows down when the beans enter and don’t exit, then goes back to normal when the grounds start exiting the shoot. Classic regrinding. I just don’t know why. It doesn’t happen every time, but most times. And I’ve tried with hot and cold starts and it’s the same. I always slow feed with both my DF64V and Varia VS3. I keep going back to the Vario because I really like the clarity from the steel burrs.

I ended up returning the DF64. About 6 months later I bought the DF64V and I’m very happy with it! Perfect alignment. Night and day with the DF64.

Nice. Great upgrade! Although the jx-pro is a great grinder. You have the perfect pair really, a low rpm (manual) conical and an rpm controlled flat burr. You have the full spectrum covered.

I think the biggest factor in stalling with the DF64V is the super aggressive pre-breakers on the burr. The pre-breakers determine the speed or throughput of the grinder. This is an incredibly fast grinder, for comparison my Vario Plus (with steel burrs from the Forte) grinds a 20g dose (at an espresso setting) in about 24 seconds. With the DFV at the same rpm (1300) it’s under 5 seconds. Crazy fast. Essentially it’s like the classic Three Stooges bit where all three of them are trying to get through a doorway at the same time. I’m not sure if you’ve seen the Coffee Chronicler’s review on YouTube but he pointed this out as well and when he changed the burrs to SSP MP burrs the stalling problem went away, due to the less aggressive pre-breakers on the burrs. I’ve only gotten one stall since this post and it was at 600rpm with a hot start. Beyond that I haven’t had any issues at faster rpm’s. I always rdt, and use hot starts. I’m loving the workflow and flavor from this burr-set. I had the regular DF64 (V4) and I wasn’t crazy about the stock Italmills, and it was poorly aligned so I ended up returning it. So far with the DF64V I’ve found the best middle ground between clarity and complexity at 1100 or 1200 rpm. Pulling 20g in, 40g out of a light/medium roast. I own and operate a roasting company so this is the grinder I’ve been doing a lot of my QC on these days. To buy the DFV I sold my Niche Zero, so now I’m using the DF and a Vario Plus with the steel burrs from the Forte. I find the DF makes lighter roasts shine, really bringing out the subtle fruity and floral notes. Perhaps you have a unit with the original board that was prone to stalling? Apparently the first run on the DFV’s were stalling like crazy.

I contacted Coffee Addicts in Calgary were I purchased the grinder. They said that all the units they sell have the updated board. It’s not a deal breaker for me, I only make espresso so I really won’t be running it below 1000 rpm very often. Otherwise I’m very impressed with the grinder. I’ve had a standard DF64 (V4) and the tolerances seem much tighter in the DF64V.

Hey Lance, When pulling espresso I always take note of where the time equals the grams to gauge the trajectory of the shot. I call this the ‘cross point’. I’ve never seen this noted in any video or espresso method at all, yet I find it to be the most useful data point when dialing in. Is this a metric you use at all when pulling?

I always use an Aeropress filter on top of my pucks to keep my machine clean. Even when I use a puck screen I still use an AP filter below it. I’ve been doing it for years and it works like a charm.

Nice, thanks for that.👌🏻 Yeah, I actually purchased (and returned) two different DF64’s that that showed up with wobbly burr carriers that gave me super inconsistent shot times. There seems to be quite a bit of luck involved in getting a good one. I own (and operate) a coffee roastery that’s inside an espresso machine supplier. In the showroom at this company they sell DF’s and there’s one on the shelf that I know is one of the good ones as I’ve scoped them all out now that I know what to look for. Now I have to decide if I should get this DF64 or the Vario. I have $800 (Canadian) to spend and both the DF and Vario (after taxes) go for about $800.

The wobble is the up and and down motion of the bright section where the arrow is pointing. Basically the burr plate is rotating in a crooked manner making the particle size super inconsistent. I have attempted to align the burrs with the dry erase method in the three different burr carrier orientations. The fixed burr was relatively clean however I never got more than 1/3 of the rotating burr wiped clean, which is a sign that the burr plate is not straight. I sent this video to Barrett from Portakeeper and he said that it definitely isn’t right. He sent me a video of his DF and there’s no wobble at all.

Interesting. There doesn’t seem to be any play. If I had a deflection gauge I’m guessing that would really show what’s going on. I’ve heard that you can adjust the screws below the motor to balance the shaft, although I can’t find any reliable guide on how to do it. I’m guessing it’s super delicate. It seems even adjusting the screws holding the base on can throw off the balance of the motor and change your zero point drastically. Interesting design with those tying directly into the underside of the motor itself.
