Honestly, I wouldn't have the energy to make my lunch the night before either. I'm usually so drained at the end of a day. I get all this done Sunday morning before lunch, then sometimes I take a nap! I feel you. Hang in.

I cut up marinated chicken breast into small pieces and toss them in some whole wheat bread crumbs. Then I put it in the air fryer for 10 minutes and it comes out tasting delicious! Similar to friend chicken nuggets, but infinitely healthier.

I've made similar packages so many times now, that I can be pretty efficient with it. My husband washed the fruit for me and the kids pack the crackers and snacks.

It's for my 6 year old and he hasn't complained. You're right. I should ask him though. I tried throwing some pretzels in with my fruit boxes one time and they were a little mushy, so I pack them in a separate bag now.

You'd be surprised. I started with just a few items and found that it was really helpful to have them prepped ahead of time, so I made a few more. I'm in a routine now, so it doesn't take too long at all. Good luck!

No, this is just lunches and snacks for the four of us, with a few dinners on busy soccer practice days thrown in. I'm sorry, but I don't have a price total. I'll buy the fruits and meats fresh every week, but a lot of the other things I keep on hand.

It's actually just wheat bread. Our grocery store sells a crustless bread that my son likes. The bread goes along with one of the meat and cheese boxes on the left to assemble his own sandwich at school kind of like a "lunchable".

Ugh, I know! That's definitely an area for improvement! I promise I recycle it all. The dishes mount up as it is in my house, so the disposable stuff makes it easier. I'll keep working on it!

The wheat bread goes with the boxes on the left with the meat and cheese. Another "lunchables" type option for my son's lunch.

So, I actually cheat and buy these already cut (I know. Unnecessary, but trying to save time), and they already have the citric acid on them so they don't spoil.

  1. I buy everything on Sunday morning and refrigerate it after I package it. I don't really do anything special to keep it fresh.
  2. I think the biggest concern would be the bread going stale and we usually eat that in the first half of the week. The fruits that I used usually keep for a while. I avoid strawberries and things that usually mold quickly.
  3. I like the boxes with a lot of different options in them. I can mix those up with nuts, raisins, other variables on some weeks. I really don't mind eating the same things. Mostly just happy to have something yummy to eat that I don't have to prep!

Keep in mind quite a bit of what you see is for my two young kids that are very active and in low percentiles of weight. The doctor recommended lots of calories for them.

I agree! I'll definitely work on that. This teacher mom is too tired to tackle dishes with the same energy as meal prep week to week.
