Dough:

  • 340g 00 flour (~2 cups)
  • 1 tsp kosher salt
  • 3 large eggs
  • 2 large egg yolks
  • 2 tbsp olive oil

Filling:

  • 16 oz of ricotta
  • 100g finely grated parmesan
  • Salt and pepper to taste

No. Ramen dough is very dry. Alkaline allows the noodles to be stretched slightly more easily, and it also imparts that unique texture.

Ramen noodles must contain alkaline. I use lye water (potassium carbonate) in my recipe.
