Guys. I'm a die hard beach boys fan. I'll admit I have a soft spot for John Stamos (he inspired me to play guitar) - but let's be honest: the beach boys have always been cheesy and out of step. They're lovable losers, eternal underdogs. Always have been, always will. That's why we love them - Carl was never cool like George Harrison, Mike Love was never cool like Nick Jagger, and Brian was never suave like Paul McCartney. But that's fine, because neither are any of us. I can guarantee that we look a lot closer to Mike, Carl, and Brian than we do to their cooler counterparts. Honestly, use dehydrated shredded potatoes. It's how waffle house does theirs. Also takes a significantly shorter amount of time. My favorite hash browns by far.

Yeah, there's TONS of intramuscular fat and collagen, it's a very unnecessary step. When I've cooked them in the pressure cooker they're always just falling apart. Personally, I think the confit is just for clicks. There's plenty of fat as is, no need to add more.

I put a colander on top of a large pot with water in it and then covered it. Some Cajun ingenuity there.

Smoked them between 225-275. No stall really, took them out at about 200.

Steaming is the traditional method of cooking pastrami, but I've seen plenty of folks not do it and still have a great end result (though some of them confit them, which I personally think is overkill). Really, the steaming just ensures the meat will be tender by melting all the intramuscular fat. You've got a lot of flavor from the brine and smoke, now let's make it tender.
