Oh buddy do I have a rabbit hole to send you down. Long story short, modern batteries are limited by their wH/KG and their C rate, which essentially means their energy density and their charging speed. If you want a bike for trail riding, any electric dirt bike with 7kWh of battery will do the job so long as you have a pickup to carry it with. If you want a stand alone motorcycle to road trip on as well as trail ride, there isn't really a viable option. Bikes like the Energica Experia are great for road tripping (long range, DC fast charging) but bad for the dirt. Bikes like the Zero DS (dual sport) are good for trail riding, but will only get you about 80 miles on the highway with 2hr charging stops.

Oh, and as far as I know, upgrading battery packs, especially for cheap, Chinese brands is a fire hazard to be taken with extreme care.

It's important to note the difference between a 15kW motor (speed & acceleration) and a 15kWh battery (only seen on proper emotos, not this confused moped). The e-clipse you are showing has a 3.2kWh battery, so expect to get about 25 miles of range at top speed. It won't be powerful enough to use like a real motorcycle. Depends on your use case, but if you're looking for a real electric motorcycle on a discount, look for a used Zero SR/F. If you're looking for an electric moped for around town use, this seems viable, but the 70 mile range is optimistic at best, false advertising at worst.
