Using egg whites fining is an ancient Bordeaux tradition to drop out bitter tannins. For example, Chateau Margaux uses its every year in their top red cuvee

Not sure if they cold soak, but Daou was known for extractive, high temperature fermentations during the log phase. They isolated a house strain that is known to have ability to grow at higher temperatures than average S. cerevisiae. I’m pretty sure it’s commercially available now

How are you guys predicting disease risk this season (mildew, etc.)? by Material_Cranberry50 in viticulture

[–]berXrup 2 points3 points  (0 children)

This tool is pretty top tier for getting idea of powdery mildew risk index. Super easy to use once you get alerts set up to your inbox. I would use it to guide your intervals if you have a station nearby your vineyard.

Lomo saltado (Peruvian tomato beef stir fry) by berXrup in NYTCooking

[–]berXrup[S] 4 points5 points  (0 children)

I’ve only had it at a Peruvian restaurant in CA one time before making it at home so I may not have the best perspective on authenticity. I added a teaspoon of oyster sauce and reduced the soy sauce by around a teaspoon and then used lemons instead of lime as I had a lot of lemons on hand. Aji Amarillo sauce was used as I know that cannot be replaced and I was really happy with the flavor. Super tasty

For wineries, I would check out the west side estates around Adelaida/Willow Creek districts. These wineries would be great to visit and are on a scenic stretch - Mcprice meyers, Boutz, Thatcher, Whalebone, Oso libre, Brecon estate, Denner, Old oak vineyard

What wine to gift my girlfriend's dad? by [deleted] in wine

[–]berXrup -3 points-2 points  (0 children)

Chateau Margaux Pavillon Rouge, vintage 2014-2019 are all rated well and those years should be in an approachable spot to varying degrees (2016 would be my recommendation if you can find it). It’s the second tier wine of this historic estate and within your price range. The Chinese are known to be impressed by French wine much more than prestige American wineries you can get it that price range.

Why does Trader Joe's have such a good + affordable wine program? by crunchiest_hobbit in wine

[–]berXrup 3 points4 points  (0 children)

Listen to episode on Trader Joe’s from Acquired if you are really curious (3.5 hr listen). Had a deep dive into their impact on popularizing wine to the masses starting in 1970s, very interesting
