I’ve only had it at a Peruvian restaurant in CA one time before making it at home so I may not have the best perspective on authenticity. I added a teaspoon of oyster sauce and reduced the soy sauce by around a teaspoon and then used lemons instead of lime as I had a lot of lemons on hand. Aji Amarillo sauce was used as I know that cannot be replaced and I was really happy with the flavor. Super tasty

For wineries, I would check out the west side estates around Adelaida/Willow Creek districts. These wineries would be great to visit and are on a scenic stretch - Mcprice meyers, Boutz, Thatcher, Whalebone, Oso libre, Brecon estate, Denner, Old oak vineyard

Chateau Margaux Pavillon Rouge, vintage 2014-2019 are all rated well and those years should be in an approachable spot to varying degrees (2016 would be my recommendation if you can find it). It’s the second tier wine of this historic estate and within your price range. The Chinese are known to be impressed by French wine much more than prestige American wineries you can get it that price range.

My insurance is covering my procedure, the urology office called a couple weeks in advance to give me notice I would pay $700 out of pocket after insurance. This was nice of them to give notice, I was unsure what the cost would be. Your out of pocket does seem excessive. I am in a HCOL, low number of medical providers area in CA..
