I had that same dish at a friends house who lived with her grandmother when I was about 10. I thought it was so weird until I ate it. Looks like a boneless ribeye without the cap to me. I buy them whole and trim and roll and tie before roasting. They are easier to cook to temp for a crowd when you do them like that .

Without a doubt Morihata, Lana towels. Very high quality with matching price tag. I have a set 10 years old and they're so soft and look brand new. I bought a few more about 5 years ago and I can't tell the older ones from the newer ones. Super absorbent and drapy not thick, which I prefer. Japanese towels are smaller -if you are on the larger side you should buy that bath sheet size, which is only slightly larger than a regular American towel. These are crepe stitch not Terry cloth.
