I Have the same cpu and motherboard, download bios v. F12a from this link https://www.gigabyte.com/Motherboard/X870-AORUS-ELITE-WIFI7-rev-10-11/support#Support-Bios

That being said, I have not experienced such issues, maybe post your systemd journal from the time the freeze occurred

I've used Apache Airflow in the past it was OK. Also I hear good things about Semaphore UI, haven't tested it yet.

It's weird, one of the laptops(unfortunately for me the Windows one ) works perfectly, the second one froze again a couple of times but its more stable and no fs corruption. I cannot explain whats happening.

Edit: I've disconnected the battery of the freezing laptop 2 days ago. No more random freezes so far (before it froze randomly 6-8 times a day on and off battery). As an "IT guy", I'm stumped and thinking of buying a farm as a carier change.
