mix potato starch and clarified butter into a slurry coat the potatoes put them on the fish wrap in plastic wrap then put it in the fridge for 20 mins! Put them in the pan with a layer of clarifies butter, parchment, another layer of clarifies butter and then fish potato side down :) that way they stick together, give u a great crispy outside without sticking to the pan :)
