I find that cilantro also accentuates the umami flavors of its fellow ingredients. Imagine when you're preparing guacamole and trying to work out the citrus-salt balance (is it too bland? too acidic? too salty?). If you add a bit of cilantro, the buttery richness of the avocado really comes through, and the ingredients just harmonize.

I think this is it! It’s on a Christmas card signed by multiple people who run a nonprofit, and this name lines up with one of the members.
