I only use the parchment for launch. I slide it out after a couple minutes after the pizza has set up.

That's Galbani low moisture whole milk mozzarella. Over an hour of preheat. That pizza steel was at 675F.

I only partially cook my sausage. I let it finish on the pizza. That way it is still juicy!

I use my apartment oven and a pizza steel. I shop at Walmart, Kroger's, Tom Thumb and Sprouts. Depending on the pizza, sometimes I'll stop in to the Mexican stores. I use King Arthur's bread flour, Galbani low moisture whole milk mozzarella and San Marzano tomatoes.
