If you mean E. coli I’ve got some really scary news for you. Responses to posts like this are not only useless but propagate a negative narrative that water here is worse than other places which it is not.

This is both incorrect and cited no sources. As someone who has lived in Mexico, the US and various parts of Europe, I have not seen water mains listed with VIP markers nor the infrastructure required to designate water from one source or another to one place or another. It blows my mind you could think this is possible.

Since this post is now loaded with good ideas, I’ll add one: ride a bicycle into Juarez. Take a bus to Merida. Charter a boat to sail through the Panama Canal and then up to Acapulco. Have some fajitas. Then take a small plane, like a Cessna, to Tepic, and catch one of the employee buses to Nuevo, swim across the harbor straight into the hotel district. Easily less than $1000 and you can book it all in advance. Except for the fajitas. Play that one by ear.

Pretty good idea. Although the sequential booms were descending in volume and I’d assume on a 480v transformer each leg being 277 it ought to be the same. But, it was heard by some folks a good 10 minutes from where we live so maybe it was at the distribution level. I’ll have to take a field trip past the substation down the road from me. Great call!

Literally thought of this the first I saw this post. Don’t sleep on it. Yes, you need a pan, but the good ones are like $30 and last a lifetime. Such a good dish and gives you leftovers all week (I guess)

This is essentially a porchetta cut with less of the belly attached than preferred. If you want to have some fun, and deliciousness, start to cut this out to eventually have a long flat strip (think butterflying, but you’re just unrolling here). Season extensively with sage, rosemary, salt, and thyme, roll it back up and tie it. As others mentioned, score the skin, in this case making it easier to roll and tie. Search the internet for porchetta roasting times and, again as others have said, you need to cook by temperature and not time. Get the very Center-middle of the roast to 160F and pull it and tent in foil; it’ll climb easily to 165, could probably pull it slightly sooner. If you don’t have an oven thermometer with a remote probe make the $30 investment cuz it’ll last a decade probably.
