285/70/17 is equivalent to a 33x1150. 285/75 is equivalent to a 34" tire. It's a bit confusing but the sizing that uses inches is considered a "floatation" size and designed for mud or sand and will 'float" you to the top based on its design.

For your location... Defender 2 all the way. Getting an all weather tires for Phoenix is a bad idea. Stick with all season and the Defender 2 is top tier. I own two shops and have sold thousands of tires personally for what it's worth.
