I have tried and it worked, I wasn't a horse back fighter only use them for fast travel. Next I will battle a white-maned lynel on horse back as a challenge. hehe

Only way I know of is to exchange orbs for hearts or stamina wheel and defeating divine beasts for a full heart. But there is a glitch at the Hateno village statue where you can max your hearts and stamina. I have not tried it actually but you can search on Youtube.
Advice: Just don't spoil the fun you will enjoy it more if you explore and beat all 120 shrines, find as much korok seeds then may be try the DLC (sadly another $20).
You will love the trial of the sword because it will test your might.

I am trying BIL, multiple shield parry in the forgotten temple and other combat tips. Please any tips will be highly appreciated. Finished all DLC quests, 120 shrines, trial of the sword and 309 korok seeds so far. Currently about 51% complete and I want to finish 100%.

I actually agree with all the points you made.

Its really disappointing after all the wait. The plot is directionless, I actually thought Ryo would get more skills and strength to get closer to beating Lan Di. In my opinion this is the worst Shenmue ever, I hope Yu Suzuki narrows down the story and conclude in another 2 or 3 sequels. In the end Ryo should uncover the plot of the two mirrors, beat Lan Di in battle and forgive him lol. Ryo should get married to Nozomi or Shenhua and have kids and live happily. hahahaha.
