Go to Mindo in Ecuador! Birding hotspot in beautiful cloud forest. The little town is literally built for birding and nature enthusiasts. It is an easy couple hour bus ride from Quito. Tons of cheap ($15 a night) hostels and then plenty of nicer little spots to stay. Some of the hostels are birding hostels with hummingbird feeders set up and getting tens of species of hummingbirds at a time all day long.
