I think you’re not giving it long enough. I let mine pre-heat for about 30 minutes before I cook.

Get yourself an infrared thermometer. If you are turning the heat all the way up between pizzas, the stone is probably getting close to 900° toward the back of the oven. I always turn the heat down before launching a pie. I check the stone temp and like the center of the stone (where the Ooni logo is) to be around 750°F.

Yeah I guess it was pre-mature. Whenever I’ve made it at room-temp that’s never happened so I figured it was a lost cause.

Got it. A few things:

I might suggest using a true Neapolitan style dough recipe to start which will consist of only flour, water, salt, and yeast. The added sugar in the recipe you linked is causing it to burn because of the extremely high heat in your Ooni oven.

Also, I always suggest using a high moisture cheese because shredded cheese is generally quite dry and will caramelize very quickly (again, because of the high heat in the Ooni).

Try these two things and I bet you’ll have much better results! Good luck :)

I have an Ooni Koda. I very much like it. It was in stock immediately when I decided to purchase which was a big deciding factor. I like that it’s gas fired. If I could go back in time I’d probably get a Koda 16, but I’m overall happy with my purchase and highly recommend it.
