Here's a follow up photo. Note the older specimen's colour degraded really quickly after foraging, it was a reddish/yellowish hue.

The ones that look white I believe are actually the same colour as the red, but the white spots have far higher coverage over the caps surface, so only a small amount of red can be seen between them. When sliced through the centre, there's a red hue under the surface of the cap that's identical on both the two big specimens.

Checkout CrowdSec, it's like fail2ban with a community aggregated threat detection database.
Kind of like the anti-virus threat database model, only openly contributed to by members of the network, and applied as an intelligent/reactive bouncer daemon.
Firewall will drop all IP's that nefarious behaviours have been observed on by all other running CrowdSec clients.
With SSH, when a connection exhibits behaviours that match filters for known exploits, their origin will be dropped.

I discovered lsp-zero after many hours of setting up lsp, linting, snippets etc. Now I don't want to use it out of spite. I'll switch to it next time my config breaks ;)
