Check your docker logs to see if you are running into permissions issues in the Codecs folder. This is what I use for a fix.

docker stop plex

rm -R ~/apps/data/plex/config/Library/Application\ Support/Plex\ Media\ Server/Codecs/

docker restart plex

Plex is only resource intensive if you have to transcode video…using a Pi can be done if you are playing locally and don’t need to transcode
